Barbara Rolls, PhD, holds the endowed Guthrie Chair of Nutrition at Pennsylvania State University and has served on the board of the NIH's National Institute of Diabetics and Digestion and Kidney Diseases. She has written three books for health professionals on nutrition and published many articles. Robert Barnett is a well-known food and nutrition writer. He is the author of Tonics and editor of the American Health Food Book. He is currently a health editor at Parenting magazine.
