The award-winning Brian Silva first started tending bar in the Colonnade Hotel in Boston in 1983 before moving to London in 1989. Since then, he has tended the grandest bars in London - the private members' club, Home House; the Connaught Hotel; Rules, London's oldest restaurant; and 5 Hertford Street, Robin Birley's club in Mayfair. He currently manages the bar at Covent Gardens Balthazar, the hugely successful restaurant owned by the Londoner Keith McNally, named by the New York Times as `the restaurateur who invented Downtown. Silva is the author of The Cocktail Book: Mixing in the Right Circles published by Balthazar.
