Matt Goulding is the US-based co-creator of the popular EAT THIS, NOT THAT! series (which sold nearly 9 million copies). He is also chief editor and publisher of Roads & Kingdoms, and the former food editor of Mens Health.

Nathan Thornburgh is chief editor and publisher of Roads & Kingdoms, and has spent much of the past decade working at Time magazine as foreign correspondent and editor.
