It was founded in Zurich in 1898 by Ambrosius Hiltl and is now run by the fourth generation of the Hiltl family. Hiltl and tibits are united by the desire to explore and expand vegetarian and vegan cooking and create healthy and tasty meals for every opportunity. Together the two have produced their first purely vegan cookbook, featuring recipes from both restaurants.
